So, if you guys did not already know, I live in a beautiful area of Newcastle with my bestie, Hilly.*
She is a huge foodie, just like me, so our meals are BIG and scrummy. She is a great chef, and I've actually learnt more about cooking in the past few months than I have in the past 20 years!! She is also ridden with allergies (Gluten, Yeast, Lactose etc etc) therefore our meals are carefully constructed and sourced- which is easier than you would presume. Salmon lunch
(you can have it for tea if you so wish)

Ingredients:
- Salmon fillets
- Rice
- Cherry Tomatoes
- Avocado
- 4 eggs
- 1 Pepper (we chose red)
Obviously you can switch up the meat and rice choice if you want.
1. First of all, Hilly seasoned the salmon with salt and pepper, and stuck it in a pan, with olive oil.
2. Whilst she did that, I took up the heavy task of scrambling some eggs. I don't actually use a pan to scramble eggs, instead I do it in the microwave, and I must say I have perfected that art. I crack the eggs, pop em in a bowl, season with salt and pepper, then stick in the microwave for 2 1/2 mins. Every 20 seconds or so I take the eggs out, whisk them and pop the straight back in. By checking up on them every 20 seconds you can see when they become creamy- because no one likes a rubbery egg.
3. The peppers and tomatoes were then cut. Pretty simple.
4. Avocado was then chopped into chunks, and rice was cooked (in the microwave from a packet cuz nobody's perfect and Tilda rice is a godsend, thank the heavens for coconut rice).
5. Finally, the peppers and tomatoes were added to the salmon pan to be fried. The tomatoes literally taste beautiful once they've been fried, oh my, you must try!!!
6. To finish, pop all of the food on the plate and take a photo to show the world how healthy you are, and prove your cookery talents.
If my mum saw this she'd be so proud.
